Spicy Cucumbers

Hello! I am glad to see you again. I will update this blog for the first time a week.
Two weeks passed since the earthquake.I live in Tokyo,now I have no problem with daily life.You worry about me, I'm very happy. Thank you very much.Of course I am worried about radiation.I'm praying for a revival of Japan as soon as possible.

Well, let me introduce to you this week's dishes Now.Do you know the spicy tofu? It is a very popular dish in China.This dish can also use tofu instead of eggplant.I tried this dish with cucumbers.This is a great discovery! Spicy cucumber is a very good food.


ingredients for 1 person

1 cucumber
2 shiitake mushrooms(or 3 mushroom)
1/2inch(1cm) cube fresh ginger
2 tbsp sake
50cc water
1/4tsp Chinese red chili paste
1tbsp miso
1tsp potato starch
1tsp sesame oil

Cut cucumber into bite-size.Chop the ginger and mushrooms.

Sake,water,Chinese red chlipaste,miso,potate starch,put them in a bowl, and mix please.

Heat the sesame oil, stir-fried cucumbers with shitake mushroom and ginger please.

Next, please pour the liquid seasoning prepared earlier.

This dish is completed.Please eat while hot.It is also good over rice between them.

Sausage made ​​from lotus root

Hello! I am glad to see you again. I will update this blog for the first time a week.
During the past week, Japan was hit hard for disaster.Tohoku area received heavy damage in the earthquake and tsunami. Although I live in Tokyo, Tokyo also has effects of an earthquake.Blackouts, fear of radiation, food shortages……,but my family is safe. This is so happy.
I know that many people in Japan can not cook now. So, I am introduced to cook without a fire on my Japanese blog.But today is the use of fire recipe.
Now,supermarket has become scarce in Tokyo.In my neighborhood there is no sausages.So, I make homemade sausage.The only vegetables without meat! I want to introduce in the recipe.


ingredients for 1 person

3 ounces lotus root
3tbsp oatmeal(It is still used in dry)
1tbsp tomato ketchup
1tbsp olive oil

Please worn down to the lotus root.

Lotus root, oatmeal, ketchup in a bowl and mix.

Please shaped like a sausage.And then saute it.

This dish is now complete.This is a lighter flavor than regular sausage.But, it is very delicious.Please try it.

Easy maze-zushi

Hello! I am glad to see you again. I will update this blog for the first time a week.
Today's recipe is sushi.There are a several types of sushi.Among the most famous is nigiri-zushi.Nigiri-zushi is often eaten at the sushi restaurant.
Japanese housewives cook sushi simpler.They are maze-zushi and chirashi-zushi.maze-zushi is rice mixed with ingredients,and chirashi-zushi is vinegared rice topped with ingredients.
Well, I will teach you how to make very simple maze-zushi.Cut vegetables steamed in vinegar, mixed with white rice only.It's easy!


ingredients for 1 person

4〜5 kidney beans(about 2oz)
1/3 carrot(about 2oz)
4oz white rice
1tbsp dry wakeme
1tbsp venegar
1tbsp mirin(or 1/2tbsp sugar)
1/4tsp salt

Chop carrots and kidney beans.

These and vinegar, mirin and salt into the pot,and put a lid on the pot and fire.Please braise until the vegetables are tender.It is about 3 minutes.

Mix the rice with this. Please be mixed with seaweed.Dried seaweed is used in a while. It is naturally soft because of the heat of rice.

Now, maze-zushi has been completed! This dish would be so easy? You'd also use other vegetables.Please try!

Gyouza made with mushrooms

Hello! I am glad to see you again. I will update this blog for the first time a week.
Today I will show you how to make "Gyouza".Gyouza is Chinese dumpling.It is baked ground meat wrapped in the skin.I used mushrooms instead of ground meat.This is a tasty and delicious!


ingredients for 1 person

3 mushroom
1/3 Japanese leek(about 1oz)
1 piece garlic
1/2tsp soy sauce
2tsp Potato starch
5 gyouza slkins
2tsp Sesame oil

Please chop Mushrooms, Japanese leek and garlic.

Mushrooms and soy sauce into a bowl. Please hand massaging it. Please hold it by hand.Put the mushroom soy sauce to taste like this.

Here in addition to Japanese leel,garlic and potato starch, mix well please.

Please wrap it in a gyouza skin.

Heat the oil to burn it, pour a little water.The amount of water is about 50cc.

Please cover the pan,and heated until no water.

Now ready! Please eat whith your favorite sauce.I like a mixture of soy sauce and vinegar.This is really delicious Gyouza! Please try!
